If you think that it is necessary to have a tandoor or oven to make soft and tasty kulcha, then this recipe will change your thinking. By using the pan available at home and a little water, you can prepare super stuffed Paneer Kulcha, which will be crispy from outside and soft from inside. Ingredients to make Watery Kulcha:

  • Ingredients for making Kulcha: 2 cups flour, half teaspoon salt, 2 tablespoons oil, 1 teaspoon baking powder, 4 tablespoons curd, water as required
  • Ingredients for Stuffing: Half cup boiled and mashed potatoes, 200 grams paneer, 2 tablespoons chopped coriander, 2 tablespoons chopped ginger, 2 teaspoons chopped green chillies, 1 teaspoon roasted cumin, 1 teaspoon ground coriander, salt as per taste, 1 teaspoon red chilli powder, ghee as required.

Method to make watery kulcha:

  • first step: Knead a soft dough by adding salt, curd, baking powder and water little by little. Add 2 tablespoons oil to it and knead it well. Cover the dough and keep it aside for an hour.
  • Second step: Now, mix all the stuffing ingredients together. Divide the dough and stuffing into 8 equal parts. Fill each ball of dough with stuffing and seal the edges tightly. Roll it out and give it a long (oval) shape. Now, apply water on the upper part of the kulcha and sprinkle nigella seeds and chopped coriander on top.
  • Third step: Now heat the pan. Pour half a cup of water on it. Immediately place the kulcha on it and cover the pan with a lid. Let the Kulcha cook until the water dries completely and the bottom of the Kulcha turns golden.
  • fourth step: Apply ghee on the kulcha, flip it and cook until brown spots appear on it. Now, serve hot.
