Spicy Watermelon Peel Curry

Material

  • Watermelon peels: 2 cups (chopped)
  • Oil: 2 tbsp
  • Cumin and mustard seeds: 1/2 tsp
  • Asafoetida: a pinch
  • Green chilli: 2 (finely chopped)
  • Spices: Turmeric (1/4 tsp), Red Chilli (1 tsp), Coriander Powder (1 tsp), Dry Mango Powder (1/2 tsp)
  • Salt: as per taste
  • Coriander: to garnish

Method of preparation
Add tempering: Heat oil in a pan. Add tempering of cumin, mustard and asafoetida to it.

Add vegetables: Add chopped watermelon peels and green chillies. Fry it on medium flame for 2-3 minutes.

Mix spices: Now add turmeric, salt and coriander powder to it. Mix well.

Cook: Sprinkle some water and cover the lid and let it cook on low flame for 5-7 minutes until the peels become soft.

Spicy Twist: When the peels are cooked, add red chili powder and dry mango powder to it.

Finishing: Fry for 2 more minutes so that the spices get coated well. Top with fresh coriander and enjoy with roti paratha.
