Hardly any vegetable can beat the taste of curry. Even today, people like Kadhi with its completely desi and Indian flavour. Kadhi is made in many ways. But in most of the houses, Kadhi with Pakodas is prepared. But Rajas kadhi is made in Madhya Pradesh. It is made without pakodas. The taste of this kadhi is quite different from normal kadhi. Chef Sanjeev Kapoor has also shared the recipe of Madhya Pradesh’s famous Rajas Kadhi. Know how to make Rajas Kadhi and what is added to it?

Rajas Kadhi Recipe

First step- To make kadhi, add 1 teaspoon cumin in 1 cup gram flour. Add salt, turmeric and 2 spoons of ginger green chilli paste in it. After mixing all the ingredients in gram flour, add two and a half cups of water and prepare its solution. Pour the prepared batter into a non-stick pan and cook while stirring continuously. When the solution becomes thick and sticky, turn off the gas and take it out in a greased plate. Set it and spread it with the help of a spoon and leave it like this for half an hour. When the gram flour settles, cut it into barfi-like pieces. Heat oil in a pan and fry the gram flour barfi prepared in it till it turns golden.

Second step- Now add half teaspoon turmeric powder, some salt and 3 teaspoons gram flour in a cup of curd. Mix everything well. If you want, beat the curd beforehand and then mix gram flour in it. Now prepare a solution by adding 3-4 cups of water. Pour 2-3 spoons of oil in the pan and add 1 spoon cumin, half spoon fenugreek seeds, one fourth spoon asafoetida, 2 finely chopped green chillies. Add 1 teaspoon grated ginger. After lightly frying, add the prepared gram flour solution into it. Cook it on medium flame for 10 minutes while stirring continuously. Now add one-fourth teaspoon ground red chilli in it.

Third step- When the kadhi has been boiling for about 15 minutes, add the fried burfi-like pieces prepared with gram flour into it. Now cook the curry for some more time while stirring continuously. When the aroma of curry starts coming, turn off the gas. Delicious Rajas Kadhi is ready. Its taste is different. You must make Kadhi like this and eat it once. Add finely chopped green coriander on top and serve the kadhi hot.
