Many times the leftover rice at home has to be thrown away, but do you know that you can make soft and fluffy idlis from the same stale rice? This is not only a smart kitchen hack but is also great in both taste and health. The special thing is that long fermentation is not necessary for this, just follow some easy steps and prepare tasty idli in minutes.

Ingredients for making idli from stale rice:

1 cup stale rice, half cup semolina, half cup curd, half cup water as required, salt as per taste, half teaspoon baking soda or eno, a little oil (for greasing)

  • First step: First of all, put stale rice in the mixer, add some water and make it a smooth paste.

  • Second step: Now take out this paste in a bowl and add semolina and curd to it and mix well.

  • Third step: If the batter seems too thick then add some water to prepare the consistency like idli. (If you add a little poha to the batter, the idli will become even softer.)

  • Fourth step: Now add salt as per taste and keep the batter for 5-10 minutes, so that the semolina swells a little.

  • fifth step: Just before making idli, add baking soda or eno to it and mix gently.

  • sixth step: After this, grease the idli mold with light oil and pour the batter.

  • seventh step: Now cook it in the steamer for 10-12 minutes. When the idli is ready, turn off the gas and let it cool for a while.

  • eighth step: Serve hot idli with coconut chutney and sambar. This idli will be so soft and spongy that everyone will praise it.
