Material
- Full Cream Milk: 1 liter
- Sugar: (as per taste)
- milk powder
- Cardamom Powder: 1 tsp
- Saffron threads: 10-12
- Chopped nuts: 2 tbsp (almonds, pistachios, cashews)

Boil milk: First of all, pour 1 liter full cream milk in a heavy bottom pan. Boil it on medium flame.
Thicken Milk: When the milk comes to a boil, reduce the flame to low. Cook the milk until it reduces to half of its original quantity. Scrape off the cream that settles on the sides and keep adding it to the milk, this will make the kulfi absolutely creamy.
Mix milk powder and sugar: In a small bowl, mix milk powder with some cold milk, make a paste and put it in the pan. After this add sugar and soaked saffron milk. Mix it well and cook for 5 more minutes.
Add dry fruits and cardamom: Now add cardamom powder and chopped nuts, almonds and pistachios. Stir the mixture well and turn off the gas. Let the mixture cool completely.
Fill and store in the pot: When the mixture becomes thick and cool, pour it into small earthen pots. Garnish with some more chopped pistachios on top.
Freeze: Cover the mouth of the pot tightly with aluminum foil so that ice crystals do not accumulate in it. Keep it in deep freezer for 7 to 8 hours or overnight.
