If you like to eat Rasmalai, but are staying away from sweets keeping in mind the weight and calories, then this Rasmalai made from Makhana can be a good option for you. It is delicious as well as rich in protein and can be easily prepared at home. This recipe serves 6 people, providing about 8 grams of protein and 180 calories per serving. Let’s note down this healthy recipe made from makhana.

Ingredients for Makhana Rasmalai

1 liter toned milk, saffron soaked in some water, 5 almonds, chopped cashews and pistachios, 2 spoons of skimmed milk powder mixed in some water, half cup roasted makhana, powdered, 70 grams roasted whole makhana, zero calorie sweetener as per taste, rose petals, custard apple pulp

How to make Makhana Rasmalai?


  • To make Makhana Rasmalai, first pour 1 liter toned milk in a heavy bottomed pan and cook on low flame. Keep stirring continuously for about 10–15 minutes. This is an important step because if you do not stir continuously the milk may stick to the bottom.

  • Now, mix 2 teaspoons of skimmed milk powder with some water to make a smooth, thin mixture. After the milk reduces a little, slowly add this mixture to the milk and keep stirring continuously. While the milk is cooking, add saffron water and keep stirring on low flame.

  • Roast the makhana until it becomes crispy. Take half a cup of roasted makhana and grind it finely. Add makhana powder to milk and mix well. This will thicken the milk and give it a creamy texture. Add remaining 70 grams roasted whole makhana along with chopped almonds, cashews and pistachios. Mix everything well.

  • Add zero-calorie sweetener as per your taste and continue cooking on low flame for a few more minutes. Turn off the flame and let it cool. Keep it in the refrigerator and let it cool for a few hours. If you wish, you can also add rose petals or fruit pulp of your choice, mango or custard apple both taste great.
