Mango Rasgulla Recipe
First step- To make this, you have to take any sweet mango and take out its pulp. Keep in mind that mango should not be too fibrous. Now peel the mango or cut it from the middle and take out its pulp. If you have to extract about 1 cup of pulp, you can use 1 big mango or 2 small mangoes for this. Now put the mango pulp in a mixer without milk and sugar and grind it.
Second step- Add half cup of fine semolina in a non-stick pan. If the semolina is thick then stir it once in the mixer jar so that the semolina will be ground thinly. Now add 1 spoon of desi ghee in the semolina and fry the semolina for 5 minutes on low flame. The semolina has to be roasted very lightly. Now add ground mango pulp to it and mix it while stirring continuously.
Third step- You have to cook it till the mango and semolina become like dough. After the mango and semolina are cooked, they will start leaving the pan. Now take out this mixture in a greased plate. While the dough cools, prepare the syrup for the sweets. For this, add 1 cup semolina and 1 cup water and cook until the sugar dissolves well. You have to cook for 5 more minutes after the sugar dissolves. Do not make any string in the syrup, just cook the syrup till it becomes sticky. Orange food color can also be added to the syrup for color. Grind two cardamoms and mix for taste.
Fourth step- Now when the mixture of mango and semolina cools down slightly, add 2 tablespoons of milk powder to it. Apply some ghee on your hands and set it, this will prevent the dough from sticking to your hands. Now make small balls from the prepared mango mixture. You can also make balls by taking the mixture with the help of a spoon. This will make all the balls of the same size.
Fifth step- Now heat ghee in the pan to fry the prepared mango gulab jamuns. Keep the gas flame slow and add as many gulab jamuns as you can at one time. Now fry them on low flame till they turn golden. Take out all the gulab jamuns and put them in syrup and cover them. Keep it in syrup for 1 hour. This will increase the size of the mango gulab jamun and the juice will also penetrate deep inside.
You must prepare and eat Gulab Jamun once during the mango season. You and your children will like this recipe very much. The special thing is that you can easily prepare it without mawa.
