Ingredients to make Rava Dhokla
One cup thick rava, one cup curd, half cup water, ginger and green chilli paste one teaspoon each, sugar half teaspoon, salt as per taste, roasted peanuts one teaspoon, eno one teaspoon, pinch of black pepper and red chilli powder.
How to make Rava Dhokla?
- First make the batter. Take a big bowl and add equal quantity of thick rava and sour curd in it. Let us tell you, use coarse rava to make rava dhokla, fine rava will not give the same texture. Try using sour curd, as it replicates the fermented flavor in the batter.
- Now add water, ginger and green chilli paste, eno, sugar and salt. Beat everything together until you get a smooth, batter. Now cover it and keep it for 10-15 minutes.
- Now prepare the steamer. Fill it with water, cover it and keep it on the gas to heat. Always preheat the steamer before adding the dhokla, this helps it puff up properly and has a better texture.
- Now check the batter. You will see that it has thickened. Add water little by little and mix until you get a smooth consistency again. Add only 1 or 2 spoons of water.
- Grease the steamer tray well with oil, now pour the batter into the greased tray and spread it evenly. Sprinkle black pepper and red chili powder evenly on top. Place the tray in the preheated steamer and steam for 12–15 minutes.
- To check whether the dhokla is done or not, insert a knife, if it comes out clean, then the dhokla is ready. Take out the tray and let the dhokla cool slightly before cutting. This sets it and makes it easier to cut cleanly.
- Your soft, spongy instant white rava dhokla is ready. Serve it with green coriander chutney.
