Gram flour papdi recipe
First step- To make papdi, take 2 cups of gram flour and add 1 cup of wheat flour after sifting it. If you want, you can make them with just gram flour also. But by adding flour, it becomes easier to roll them and people also like the taste more. Now add ground spices like salt, red chilli powder, turmeric powder, cumin, celery, some white sesame seeds and asafoetida. Now add Kasuri Methi to it. Add some crushed green chillies in it. For kneading, add 2-3 spoons of oil in it.
Second step- Now mix everything well first. Now add water little by little and knead it like a tight dough. You have to make a hard dough like puri, if the dough is hard then the papdi will be more crispy. Leave the dough to set for 10 minutes. Now take a small ball of flour and roll it into a thin crust. If you want, roll it out into a big puri and cut it with a bowl or glass. This way many crusts will be formed very quickly and at one time. Keep all the papdis like this.
Third step- Now heat the oil in the pan and after heating the oil once, reduce the flame to very low. Now add as many crusts as possible at one time. Do not put them on high gas because then they will not become crispy. Now cook the papdi by turning it from both the sides till it becomes light golden. Keep baking all the papdis like this and take them out and keep them aside. When the crusts cool down, they can be stored in a box. These taste very crispy and crunchy.
