If you want to make something for dinner which is tasty as well as rich in protein and fiber, then Soya-Mushroom Biryani can be a good option. One serving of this recipe provides about 35 grams of protein, 8 grams of fiber and 470 calories. Brown Basmati rice has been used to make it, which has more fiber than white rice. Ingredients for Soya-Mushroom Biryani


  • Ingredients for marinade: 60 grams soya chunks, 15–18 mushrooms, chopped, 300 grams skyr, 2 air-fried onions, chopped coriander and mint, 1 tablespoon biryani masala, 1 tablespoon kasuri methi, 1 teaspoon red chili powder, salt to taste, green chili-garlic paste, lemon juice to taste, 1 tablespoon jaggery powder.

  • Ingredients for rice: 85 grams Daawat Brown Basmati Rice, 1 cinnamon stick, 3–4 black peppercorns, 1 tsp ghee, a pinch of salt

  • Ingredients for layering: 90% cooked brown basmati rice, fresh mint, 30–35 ml toned milk mixed with saffron

How to make Soya-Mushroom Biryani?

  • Boil the soya chunks, squeeze out all the excess water and keep them aside. Thinly slice 2 medium sized onions, spray with a little oil and fry until they turn brown and crisp. Now prepare marinade by mixing soya chunks, mushrooms, roasted onions, chopped coriander and mint, biryani masala, kasoori fenugreek, red chilli powder, salt, green chilli-garlic paste, lemon juice and jaggery powder. Mix them well and leave it for 10-15 minutes.

  • Cook brown basmati rice with cinnamon, black pepper, 1 teaspoon ghee and a pinch of salt until 90% cooked. Filter the water and keep it aside. Heat 1 teaspoon ghee in a pan and add cumin seeds to it. When the cumin seeds start crackling, add the entire marinated soya-mushroom mixture into it. Cook on low flame for 10–12 minutes. Layer 90% cooked rice over the soya-mushroom mixture. Top with remaining fried onions, fresh mint and saffron milk.

  • Now cover them with a lid and cook on low flame for 6-7 minutes more, so that the rice gets cooked completely and all the flavors mix well. Your soya biryani is ready
