Ingredients to make Tikki Chole
- Chickpea 250 grams, salt as per taste, big cardamom 1, bay leaf 2, cloves 4-5 nos., baking soda a big pinch, water as per requirement, green chilli 2, ginger 2, salt a pinch, ghee 2 tbsp, cumin a big pinch, asafoetida 1/4 tsp, salt as per taste, black salt 1 tsp, red hot chilli powder 2 tsp, yellow chilli powder 2 Small spoon, Coriander powder 1 tablespoon, Garam masala 1 teaspoon, Tamarind ball, Ginger 1 inch, Roasted Kasuri, Fenugreek powder a big pinch, Green coriander a handful.
- Ingredients for Aloo Tikki: Potatoes 7-8, salt as per taste, corn flour 3-4 tbsp, corn flour as per need, ghee 3 tbsp
How to make Aloo Tikki Chole?
- Step 1: Wash the chana and soak it in water overnight or for 8-10 hours. Drain the water and put the soaked chana in a pressure cooker along with salt, whole spices, baking soda and water. Cook the chana in a pressure cooker on high flame till the first whistle, then cook on medium flame for 4-5 more whistles. Turn off the flame and let the steam from the cooker come out on its own.
- Step 2: Grind ginger and chilli in a mortar or small mixer grinder and make a paste. Place a pan on high flame, add ghee in it and let it heat. After this add cumin, asafoetida and paste, mix well and cook on high flame for a minute. Add cooked chickpeas, then add all the ground spices and tamarind water, mix well and cook on high flame for 7-8 minutes. While mixing, mash some chickpeas, this will thicken the chickpeas.
- Third step; Now, grate the boiled potatoes and put them in a large bowl, then add salt and gradually add corn flour. Mix well and prepare potato dough; The quantity of corn flour may increase or decrease depending on the quality of the potatoes. The mixture should not be sticky, just bind well.
- Step 4: Take a small portion of the mixture and shape it into a round shape, then press to make tikkis. Sprinkle some corn flour on it and make a light coating. Place a pan on high flame and add ghee. Now place the tikkis on it and fry on medium flame till they become light golden from both the sides. Then press the tikkis with a potato masher to give them a flat shape and fry on low flame till they become golden from both the sides. Your crispy aloo tikkis are ready.
- Fifth Step: Now put chickpeas in a plate and place tikki on top, add green coriander chutney and tomato chutney and serve.
