Ingredients for Kathiawadi Lasaniya Batata:
- Boiled baby potatoes 500 grams, Kashmiri red chilli powder one teaspoon, turmeric powder half teaspoon, black salt half teaspoon, oil one teaspoon.
- Garlic thirty to 30 cloves, Kashmiri red chilli powder 2 teaspoons, hot red chilli powder one teaspoon, coriander powder half teaspoon, turmeric powder half teaspoon, cumin powder half teaspoon, salt as per taste, water hot.
- Oil 2 spoons, a pinch of cumin, a little asafoetida, 1 onion, 1 tomato, salt as per taste, hot water, garam masala, green coriander for garnishing.
How to make Kathiawadi Lasaniya Batata?
- To marinate the potatoes, add Kashmiri red chilli powder, turmeric, black salt and oil and mix well so that the spices get evenly coated on each potato.
- Now, take a mortar and pestle and add garlic and salt to it. Grind it and make a coarse paste. Add Kashmiri red chilli powder and hot red chilli powder to it and mix it with crushed garlic. This is actually the base of the garlic chutney that will add flavor to the dish. Take it out in a bowl and add coriander powder, turmeric and cumin powder. Gradually add water and make a thick paste.
- Place a pan on high flame and add oil. Add the spiced potatoes and fry on high flame until they become crisp. Take out the potatoes and keep them aside. Now add cumin and asafoetida in the same oil and let them crackle. Add chopped onion and cook on high flame till it turns golden.
- Now add garlic paste, chopped tomato and a pinch of salt. Cook on high flame for 2-3 minutes until the raw smell of garlic goes away. Add water and cook on medium flame for 3-4 minutes until the tomatoes are completely cooked.
- Add potatoes and mix well. Taste and adjust the salt. Finally add fresh coriander and stir gently. Your Garlic Lasagna Batata is ready. Serve it hot with roti and rice.
