Raw Mango Launji Recipe
First step- To make Launji, take 2-3 big raw mangoes. Wash the mango, wipe it, peel it and separate the seeds. Now cut the mango into medium sized pieces like potatoes. The specialty of Launji is that it does not contain onion, garlic, green chillies and green coriander. It can be made with just raw mango, jaggery and some spices.
Second step- Place the pan on the gas and add 2 spoons of mustard oil in it. When the oil is hot, add fennel instead of cumin. When the fennel starts crackling lightly, add ground turmeric, coriander powder, salt and red chilli to it. Now immediately add chopped raw mango and mix everything.
Third step- Now add 2 big cups of water and cover and cook it like a vegetable. When the mangoes are slightly softened, take out one and check by pressing it with your hand. Now use sugar or jaggery for sweetness. You can take more or less sugar or jaggery as per your convenience.
Fourth step- After the sugar or jaggery used dissolves, the launji has to be cooked for some time. Now you can make Launji sweet and sour as per your choice and wet or dry as per your choice. After everything is cooked, turn off the gas.
Mango launji is ready, which you can eat with roti, paratha or rice. You can also store it in the refrigerator for 10-15 days. Whenever you want, you can heat the Mango Launji or eat it as is.
