Parboiled rice (idli rice) – 1 cup, urad dal – 1/4 cup, whole green moong dal – 1/4 cup, yellow moong dal – 1/4 cup, arhar dal – 1/4 cup, rajgira – 1/4 cup, nachni 1/4 cup, poha – 1/4 cup, fenugreek seeds – 1 tsp, green chilli – 2, ginger – 1 inch, water As per requirement, salt as per taste
How to make high protein dosa?
- Wash all the grains, pulses and millets together with clean water. Wash at least 3-4 times or until the water runs clear and then soak them for at least 4-5 hours. After soaking, filter the water and wash once again with clean water.
- Put the soaked grains in the mixer grinder and add green chillies and ginger to it. Add a little water and make a fine paste. Do not add too much water as the batter or paste should be thick, just like normal dosa batter. If necessary, grind it little by little.
- Take out the ground batter in a big vessel and keep it in a warm place overnight for fermentation. After fermenting overnight, the batter will rise and increase in volume; Mix the batter gently. Add salt as per taste and mix once again.
- Your healthy dosa batter is ready. If stored properly, it stays good for a few days in the refrigerator. Take out only as much batter as needed to make dosa at a time, not the entire batch. Now place the dosa pan and pour the dosa batter on it and rotate it. Bake it till it becomes crunchy from both the sides. When dosa is ready, serve it with coconut chutney.
