Making pure and chemical-free olive oil at home is not only easy, but it is also much fresher and healthier than the oils available in the market. Marketed oils often contain adulteration or preservatives, but you can prepare pure extra virgin olive oil at home. Know here how to make olive oil.

Material

  • Fresh olives: 1 to 2 kg (green or black, fully ripe)
  • Water: As required (lukewarm)
  • Equipment: mixer or food processor, a large pot, cotton cloth (muslin), and a heavy weight object.

Step 1: Cleaning the Olives

First of all, wash the olives thoroughly with clean water 2-3 times to remove all dust. Separate its leaves and stalk.

Step 2: Remove seeds and grind
Take out the seeds present inside the olives. Now put the pulp in a mixer or food processor. Add 2-3 spoons of lukewarm water in it so that it can grind easily. Blend it until it becomes a thick, smooth paste.

Step 3: Malaxification
Take out this paste in a big vessel and keep stirring it continuously with a spoon for at least 15-20 minutes. This process is called ‘malaxification’. By doing this, small droplets of olive oil start coming together and turn into big drops and the oil starts shining on the surface of the paste.

Step 4: Strain the Oil
Now place a cotton or muslin cloth over a deep vessel. Add olive paste to this cloth. Make a bundle by gathering the cloth from all sides and press it with your hands to extract the juice. You can also place a heavy weight on this bundle to extract all the juice.

Step 5: Separating Oil and Water
The thick liquid that has collected in the vessel contains both the oil and the natural water of the olives. Fill this mixture in a glass jar and leave it for 1 hour. Due to the difference in density, the water will settle to the bottom and the pure olive oil will float to the top. Now with the help of a syringe, dropper or spoon, gently take out the pure oil floating on top and store it in a clean glass bottle.
