Material

  • Arhar dal: 1 cup (soaked)
  • Semolina: ½ cup
  • Curd: ½ cup
  • Green chilli and ginger paste: 1 tsp
  • Mustard seeds: 1 tsp
  • Curry leaves: 8-10
  • Asafoetida: a pinch
  • Eno or baking soda: ½ tsp
  • Oil: 1 tbsp
  • Coriander: finely chopped
  • Salt: as per taste

method of making

Wash arhar dal and soak it in water for at least 3-4 hours. After this, drain the water and add a little water to the dal in the mixer to make a coarse or smooth paste.

Step 2
Take out the ground arhar dal in a big vessel. Add semolina, curd, green chilli ginger paste and salt and mix well. If the batter seems too thick, add some water and keep it covered for 15 minutes so that the semolina swells.

Step 3
Heat oil in a small pan. Add mustard seeds, asafoetida and curry leaves and crackle. Mix this tempering in the dal solution. Also add finely chopped coriander.

Step 4
Grease the idli stand with oil and keep water in the steamer to boil.

Lastly, add Eno or baking soda to the batter and add one spoon of water and mix gently in one direction. The batter will rise immediately.

Step 5
Fill the batter into idli molds and steam them in a steamer on high flame for 10-12 minutes. Idli will be ready in 15 minutes. Then serve it with sambar and chutney.
