Tips to remove bitterness from bitter gourd- First of all it is important to remove bitterness from bitter gourd. For stuffed bitter gourd, take medium sized bitter gourd. Peel the bitter gourd and remove the seeds inside. Now add some water to salt and turmeric and make a thick solution. Apply this solution thoroughly on bitter gourd. Leave it like this for 15 minutes and then wash it with clean water.

Fry the bitter gourd- Now to reduce the bitterness of bitter gourd, first fry them lightly. When the water of bitter gourd dries up, fry them lightly in mustard oil. This will remove the bitterness of the bitter gourd and will further enhance the taste of the stuffed bitter gourd. In the same pan, fry the peel and seeds of bitter gourd.

Stuffed bitter gourd masala- Now make the masala for the stuffed bitter gourd. For this, grate 2-3 onions. Crush garlic and ginger and add it. Now add mustard oil in the pan and add asafoetida, cumin, fennel, nigella and crackle. Now add onion, garlic and ginger and fry. Add dry coriander, turmeric, salt, red chilli, mango powder and fennel powder to it. While frying the spices, add roasted bitter gourd seeds and peel to it. This will give the stuffed bitter gourd a grandmotherly taste.

How to fill spices in bitter gourd- Now cool the prepared masala slightly. Fill the fried bitter gourd with masala and close it by wrapping it with a thread. Prepare all the bitter gourds like this. Now add just 1-2 spoons of oil in the pan and put all the bitter gourds back in the pan. Reduce the flame of the gas and fry the bitter gourd for a while while turning.
