After knowing the benefits of bitter gourd, one feels like eating it but does not like the bitter taste. If you also have the same problem, then we are telling you how to make bitter gourd vegetable which will be spicy and all its bitterness will be removed. If you prepare bitter gourd in this way and eat it, the vegetable will not taste bitter at all. You can enjoy it with dal-rice or roti paratha. Bitter gourd vegetable recipe

First step- To make vegetable, you have to take very fresh and hard bitter gourds. Break the bitter gourd and see if it breaks easily then understand that the bitter gourd is raw and perfect for making vegetables. Now wash the bitter gourd and cut it into round chips-like shapes. If the seeds are hard, black or red then remove them. Raw seeds add good taste to the vegetable.

Second step- To reduce bitterness, take raw mango and peel it and cut it into long pieces. Due to this, the taste of bitter gourd vegetable increases manifold. Now take a pan, add mustard oil and shallow fry the chopped bitter gourd. Keep stirring the bitter gourd and keep frying it on high flame. This will reduce the bitterness of bitter gourd. You have to cook the bitter gourd for about 10-12 minutes.

Third step- Now to make bitter gourd curry tadka, add some mustard oil in the pan. Add cumin, fennel, whole coriander, some nigella seeds, finely chopped onion and fry lightly. Do not burn the onion too much. Now add garlic to it and fry. Add green chillies and chopped ginger as per taste. After some time, add asafoetida and while frying the spices, add chopped raw mango.

Fourth step- Now add finely chopped tomatoes to the spices. Now add some salt because bitter gourd also has salt in it. Cook the tomatoes till they melt and then add turmeric powder, coriander powder, Kashmiri red chilli powder and sprinkle some water so that the spices do not burn. Now keep frying it on low flame.

Fifth step- When the masala starts leaving the pan, add fried bitter gourd to it. Now add mango powder and some black salt on top. Add some Kasuri fenugreek and cook the bitter gourd well. Now add finely chopped green coriander to the vegetable. You will enjoy eating it.
